KC Strip Steak

Ingredients
  1. 2 KC Strip Steaks (will feed 4 people)
  2. Worcestershire sauce
  3. Garlic powder
  4. Pepper
  5. Salt
  6. Spices of your choice
Instructions
  1. You can marinade the steak in beer over night. The beef will be more tender with a richer, bolder taste. This step can be skipped.
  2. Simply add Worcestershire sauce along with the spices.
  3. Place in the pan or on the grill. Cook 7-8 minutes for medium.
  4. Adjust your cooking time based on the thickness of the steak or doneness.
  5. Season the other side as above.
  6. Allow the steak set for 3-4 minutes after removing from pan/grill.

A healthy twist on breaded chicken that even the children will enjoy. Make extra and use the leftovers for chicken salad or even chicken tacos.

Ingredients
  1. 4 Chicken Breasts (skinless, boneless)
  2. 2 Tbsp Extra Virgin Olive Oil
  3. 3 Large Eggs
  4. 1-2 cups Planko Bread Crumbs
  5. 1 cup Coconut Flour
  6. 1-2 tsp Cayenne Pepper
  7. 1/2-1 tsp Garlic Powder
  8. 3-4 twist Pink Himalayan Salt
Instructions
  1. Drizzle the olive oil on the bottom of the cooking dish.
  2. Beat the eggs to be used for an egg bath.
  3. Coat the chicken breast with coconut flour (and additional seasoning).
  4. Dip the coconut covered chicken with the egg wash.
  5. Coat the chicken with Planko bread crumbs.
  6. Place in cooking dish.
  7. Drizzle olive oil over the top if you want the chicken more crispy.
  8. Cook in the oven at 375* for 50-60 minutes. Cooking time varies on the thickness of the chicken.
Notes
  1. If you do not want to use the Planko Breading, double dip with the Coconut Flour.
  2. Add seasoning to your taste. For the children, sometimes basic is better.
  3. Add sprinkles of Cinnamon and Crushed Red Pepper for extra YUM!

Simple Tilapia

  1. 2 Servings of Tilapia
  2. 2 Tbsp Olive Oil
  3. 1 Lemon
  4. Pink Himalayan Salt
  5. Fresh Pepper
Instructions
  1. Preheat oven to 350*
  2. Drizzle olive oil in the cooking dish.
  3. Place the tilapia in the pan.
  4. Cut the lemon in half and squeeze over the tilapia.
  5. Season with salt and pepper to taste.
  6. Cook at 350* for 25 minutes.
  7. Tilapia should be white in color and a little golden on the sides.
Notes
  1. Cook extra tilapia for fish tacos on another evening! Scrumptious!

  1. 1 whole Chicken
  2. Olive Oil
  3. 1 Lemon
  4. 1 Lime

  7. Cinnamon
Instructions
  1. Preheat oven to 350*.
  2. Place chicken in baking dish.
  3. Drizzle olive oil over the chicken.
  4. Cut the lemon and lime in half. Squeeze the juices over the chicken.
  5. Add Salt and pepper to taste.
  6. Cinnamon is a GREAT secret sauce. Will tickle those tastebuds.
Notes
  1. Spice it up with Cajun seasoning or Red Crush Pepper.
  2. If there is skin on the chicken, you can place it under the broiler for 3-5 minutes to crisp up the skin.
